Conversation Heart Cheesecake Recipe

This Valentine’s Day, tell your sweetheart “I LUV U” and “BE MINE” with homemade cheesecakes that look just like the holiday candy we all know and love — conversation hearts!

Ingredients

1 cup graham cracker crumbs (15 squares)
Pinch of cinnamon
1/2 stick butter (melted)
16 ounces (2 blocks) cream cheese, softened
1 cup sugar
3 large eggs
2 cups sour cream
1 teaspoon vanilla extract
Food coloring

Supplies

Stand mixer or a mixing bowl and hand mixer
Rubber spatula
Heart-shaped silicone molds
Fine tip paint brush
Roasting pan big enough to fit your heart shaped molds

Method

Combine graham cracker crumbs, cinnamon, and melted butter, stirring until it looks like sand. Spoon out about a tablespoon of crumb mixture into each mold, pressing the crumbs down to make an even crust. Refrigerate.

Beat the cream cheese on medium-high until smooth, then add sugar and beat for one minute. Add eggs and beat until creamy, then add the sour cream and vanilla and mix them together. Add food coloring and pour  filling into molds.

Place your molds in a roasting pan and carefully pour boiling water around them, filling the pan so the water goes halfway up the sides of the mold.

Bake for 15-30 minutes, depending on the size of your molds, until the center of each cake is jiggly but set, not soupy. Cool at room temperature for an hour. Chill overnight in the refrigerator or freeze before removing from molds.

Decorating

Squeeze a few drops of red food coloring into a small bowl, then use a fine tip paintbrush to paint conversation heart sayings onto each cheesecake. Refrigerate to dry the food coloring and serve at room temperature!
