4 Popsicle Recipes

They’re simple, tasty, and oh so refreshing — nothing cools you down on a hot summer day quite like homemade popsicles straight from the freezer.

Reusable plastic popsicle molds are great to have on hand, but if you don’t have any, you can still make flavorful frozen pops. Just use small paper cups and cover the tops with aluminum foil, poking your popsicle sticks through the foil so they stay upright.

Try these four popsicle recipes.

Blueberry Pops

  • Ingredients: 2 cups of frozen blueberries, thawed; ¼ cup of apple juice; 2 tablespoons of honey; half of a lemon, juiced; a pinch of salt. (Makes about 5 pops.)
  • Method: Combine all the ingredients in a blender and blend until smooth. Pour the mixture into the popsicle molds and place in the freezer for at least five hours.

Root Beer Float Pops

  • Ingredients: 12-14 ounces of root beer; 1¼ cups of vanilla ice cream, slightly softened. (Makes 10 pops.)
  • Method: Pour a small amount of root beer (less than an inch) into each popsicle mold, then divide the ice cream evenly among each mold in spoonfuls. Add more root beer until each mold is filled to the top. Replace the lid on the popsicle molds and place in the freezer for at least five hours.

Avocado Pops

  • Ingredients: 3 medium ripe avocados, pitted and scooped; 1½ cups of milk (soy milk or other milk alternatives can be substituted); 4 tablespoons of sweetened condensed milk; simple syrup or agave syrup, as needed. (Makes 10 pops.)
  • Method: Add avocado, milk, and sweetened condensed milk into a blender and puree. Taste the mixture, and if you would like it to be sweeter, add simple syrup or agave syrup to taste. Pour the mixture into popsicle molds and place in the freezer for at least three hours.

Strawberry Pops

  • Ingredients: 1 cup of strawberries, with stems removed; 1 cup of vanilla yogurt. (Makes 8 pops.)
  • Method: Puree or blend the strawberries until completely smooth, with no chunks remaining. Alternate adding small amounts of the strawberry puree and vanilla yogurt into the popsicle molds, creating a layered effect. Place in the freezer for at least five hours and enjoy!
