Southwestern Salad Recipe: A Springtime Favorite

Spring has sprung, and you know what that means — fresh fruit and veggies! There’s no better way to show off your yield of crisp produce than a light and tangy salad featuring seasonal favorites such as fresh lettuces, strawberries, cilantro, and basil. A dash of lime adds zing, and a handful of pistachios brings some crunch (and healthy fat!) to the mix.

Ingredients

½ cup olive oil
¾ cup fresh cilantro
¼ cup lime juice
1 teaspoon sugar
1 teaspoon salt
1 small garlic clove
1 cup strawberries
½ cup pistachios
¼ cup fresh basil
4 cups mixed greens
Salt and pepper to taste

Method

  • Place the olive oil, cilantro, lime juice, sugar, salt, and garlic in a blender or food processor and blend until smooth. Set aside to be used as dressing later.
  • Cut the strawberries into small slices, and chop the pistachios roughly.
  • Stack the basil leaves on top of each other, then roll the stack lengthwise. Using a sharp knife, chiffonade the basil by slicing the roll into thin ribbons.
  • Place the strawberries, pistachios, basil, and mixed greens in a big bowl.
  • Pour 1/4 cup of the dressing into the serving bowl and toss the salad to coat. Taste and add more dressing and salt and pepper if desired. Enjoy your southwestern salad!
